In Toronto, there’s this big, bad ass thing called the Ontario Food Terminal. It’s a huge hunker, and the site of Canada’s largest fruit and produce distribution. Guaranteed a few billion bananas have gone through the terminal by now. And into the hands of groups like Dominion Citrus Income Fund, which includes the Meschino Banana Company.
Its founder Joe Meschino is Toronto’s go-to guy for ripening bananas into the little yellow beasts we’ve grown to love. In effect, the food terminal is not the last stop before bananas reach supermarkets; Mr. Meschino is. “People walk into stores and see yellow bananas and think they come like that,” said Meschino.But Meschino doesn’t wave a magic wand to make them yellow. First, he has to gas them with synthetic ethylene in heavy, metal door chambers. Then, you can eat them.
